Tis the season of squash! This is the time of year when winter squash flood our farmers markets and grocery stands, enjoy with bright colors and fun shapes. If you are not already part of your diet winter squash, it’s time to start. Squash is a food nutrient known to support the health of bones, respiratory well-being, regulation of sugar in the blood and the strong eyes, among other benefits!
We know all squash, pumpkin and butternut, but there are more squash with delicious flavor and high levels of nutrients to try this winter! Read on to discover several smaller squash known winter, their unique flavours and suggestions for cooking.

1. Banana Squash

Lhis long, thin squash has an orange, pink or blue skin and orange flesh firm and brilliant features. once cooked, banana squash has a sweet, rich and earthy taste that is ideal for roasting or adding to soups and stews.
2. Delicata squash
Sometimes referred to as a ‘sweet potato squash’, this small cylindrical squash has skin edible yellow with green stripes. Orange flesh, you’ll find inside has a very similar to the potato flavor soft (you guessed it!) and is best when sautéed or stuffed.
3. Kabocha squash
Dark green and bumpy, this squash is often called a Japanese pumpkin. The flesh of the kabocha squash is remarkably soft, with a pleasant nutty flavor and a texture that resembles a mix of pumpkin and sweet potato. Try it grilled or stew of in your Favorites!
4. Sweet Dumpling Squash
This adorable little squash is pale in color with bright orange to dark green stripes. The flesh is mealy and sweet, with a flavor that is reminiscent of roasted corn. The sweet dumpling is often regarded as a ‘single serving’ squash and is perfect for stuffing.
5. Squash turban
This exotic-looking squash has a bumpy exterior which can vary in color from mottled green to orange and yellow. Use it in recipes that call for the butternut, Acorn or other winter squash. Scooped out, it also makes a festive soup!
